Do you mean the Page Builder designer component itself, or the resulting page(s) from using it?
(I agree, the back-end is weird (I don't like it). I tend to use the front-end editing. (that's ironic because other users complained when they removed the back-end completely, then they reinstated that in later versions.)
I'm surprised v3.8.10 works with J5 - isn't that designed for Joomla 4? Last update for SPPB 3.8.10 was May 2023. First release of J5 was October 2023.
So the answer is "No" you can't change it. That component is so jam-packed with features, it's impossible to probably do it any other way.
